Air in the lines can/will give a False input to the Pump at times, common! If it increases the cycling you could also have a Leak! If so check and Hand tighten all Hot and Cold water connections, some do loosen from vibration! Youroo!!

I tend to agree with youroo's first assessment. If it were a leak in the system, it would have happened more than once or twice the first night, and the fact that it didn't occur the second night seems to confirm the fact that there isn't a leak in the plumbing.

I turn off the water pump at night for the reason you state but also the bright blue switch light shines into our bedroom annoying me.

Often on our first night out, we'll get a water pump quick cycle in the middle of the night due to air in the lines as youroo mentioned or it could be the pump head simply leaks off enough to cycle. Should it continue to cycle more than once, maybe twice, you should look for a small leak.

Some folks may consider it a real pain and totally unnecessary, but for me and my peace of mind ~ I NEVER go to sleep (intentionally) or leave the TT with the pump switch turned on. Not even outside visiting with others!
If you have a full tank of water and 'spring' a leak someplace when you aren't there or you're way to tired (?) to wake up with the sound of the pump running, you will definitely wind up with an empty tank, possibly a ruined pump and or a dead battery. Not to mention what else will/might be ruined from water damage.
As I said at the beginning ~ Peace of mind for ME.

We usually turn our pump off unless actually using water. This our 3rd rig and it's just habit now. But especially at night! The number of idiot lights I cover every night is ridiculous!

Shurflo pumps can run dry
Shurflo pumps are the gold standard in RVs. They are a diaphragm pump, and it doesn't hurt them to run dry. It is just a rubber gasket that moves up and down (or sideways). It might wear out the rubber eventually, but it won't burn up the motor. That said, I always turn mine off, especially at night.

Good plan to turn off at night and when leaving the TT. You can purchase a simple accumulator for the system to store pressure for the night and it can help absorb system pressure impact as well. Easy to install and maintain.

I turn it off as well when not being used for a while. Along with that I shut off water at the hookup when using city connection and going to be away for a while. Hot water heater off unless we will need some.
Just habit now and peace of mind while away from camper.

x2 on the accumulator tank. Our pump is right below our bed! Didn't want it starting in the middle of the night!
I put in the 2 gallon unit from Water Worker. You can install it anywhere you can access a cold water line. Took out the factory installed water filter while I was at it. Too many stories of those causing big issues.
