What are these hoses for?
I was crawling underneath the trailer and saw these hoses sticking out. Any ideas on what they do?

Those are your low point drains. Used to train the water out of you water lines when you are winterizing your unit.

Both may be low point drains (hot/cold) or one is low point drain and one is holding tank drain unless there is another holding tank drain accounted for.

Yes on the low point Drains used to Drain system. Careful though if winterizing this does not completely drain the system, still must blow lines out or use plumbing antifreeze which ever is your choice

There is a gray water low point accounted for as well as a fresh water low point. So I guess these would be for draining the lines themselves?

Grey water and black water drains are the big ones with big caps and drain into a sewer system, fresh water is a petcock drain and the blue and red are low point drains for the fresh water system.

Blue drains the cold water line. Red drains the hot.

The dealer told me this was gray water low point, which I thought was odd. Still trying to learn the in and outs of this while rv thing.

Drains
I agree with "Old Coot;" your dealer was "out-to-lunch. Without looking at the trailer, I would say that the drain looks like the fresh water tank drain. As for the blue and red lines, they are definitely the low-point drains for the hot and cold water lines. In my A122S, they are located right next to, and in the compartment containing, the hot water heater. Actually pretty convenient.

My fresh water drain is actually up front where the fresh tank is. I have no idea what the single blue hose would do. I just don't want to start opening drains without knowing what they do.

You can do a dye test. Put something red in the gray tank and see if it some red comes out of the pipe.

All three hoses are low point drains (hot, cold, & fresh water). If traveling with empty fresh water tanks, replacing the cap with a bal valve you can easily drain the FW tanks before you leave.

Are you sure the one up front is a drain or is it the holding tank vent? If it doesn't have a cap or plug it would be the vent for the tank.

It always helps to tell everyone what brand and model of trailer you have when asking questions.
In your picture, as others have said, the blue is the cold water drain and the red is the hot water low point drains. Also in your picture it looks like the fresh water holding tank drain. There might also be a fourth hose that isn't capped and that would be your fresh water tank overflow tube.

My fresh water tank and drain are both up front. Then the red and blue and the other blue hose by itself are at the back.

Red and blue are the water system, light blue is a the freshwater tank. It looks like the FW tank is under floor on that model so having a drain at the rear makes sense.
I'm guessing your dealer never winterized anything - I guess that is an issue with being in a warm state...
