Flagstaff V-Hull or Windjammer owner! Battery Question!

We're looking at either the Flagstaff or Windjammer V-hulls (same trailer) and have a battery question. I noticed they all have a single battery on the tongue and I prefer dual batteries. I can see why they do that because of the V-hull design.

For those of you that added a second battery, how did you do it? I'm pretty handy and have access to welding, metal fab etc, so I'm not too concerned about adding the battery but wanted some input from folks that have done it. It looks like I could weld on a wider battery tray to accommodate 2 batteries, or come up with an arrangement where the batteries are stacked. Any ideas would be appreciated.
