Sunseeker 3170DS tire sizing/rated

We're on our 6k mile trip and after 600 miles the rear inner tire on the passenger side shredded. As we're fairly new to this gig, we didn't realize it at first (until the rubber smell). Luckily a rest area appeared and we stopped there. Coachnet came around midnight and put on the spare, we spent the night and are off again. It's a Sunday in MS and actual tire stores are not open.
We are a family of 6 and towing the infamous Odyssey.
Our concerns are: given the 3170 limited CCC should we be looking at replacing 4 rear LTX M/S 22575 R16 tires with tires that can hold more weight? (we have to replace the spare tomorrow)
We are aware that we will always be at max weight as a family traveling.

We will weigh as soon as we come upon another weigh station but have not done it on this trip.
We will install TPMS at the end of this week.
