That will be a good first stop. Fort Wilderness is one of the best campgrounds to stay at.
It does not sound like you will have the time to camp in the driveway before you go, but if you do I recommend it. It will give you an opportunity to see what you forgot (like leaving up the TV antenna, etc).
I don't know where you are driving from, but many of FL rest stops allow overnight camping. That is pretty handy if you are just traversing an area.
Another nice tip is to travel with about 10 or 20 gallons of water aboard. My pardette does not worry about whether the bathrooms along the way are clean as long as the one in the trailer is. We also have about 20# of ice in the freezer which is also nice. You can even save a few dollars by eating in the trailer when stop for lunch or dinner.
Some people have gensets. If your genset has remote start, you can leave the air conditioner on while you are traveling. When you are about a 1/2 hour from the rest stop, hit the genset remote start and the air conditioner will start cooling down the RV.
