Switch next to fuse box? A122
Under the table, on the bench, under the fuse box, there are two toggle switches. Facing the fuse box, the one on the right turns on the water heater. Got it.
What does the one on the left side control?

Is it the switch for the water pump? We only have one switch under the table and the water pump switch is under the sink.

What year is it? Did you purchase new or used? If used it could be an add on or modification from previous owner. My water pump switch is in the location you refer to but I have a different model (a124). If it's the water pump switch you'll hear it run when you use the water from fresh water tank. If I remember correctly the older 122's do have the pump switch in that location.

It's a 2011. Yes, we bought it used. What a pain it has been to not have a good walk through educational session from a dealer!
It looks very factory installed.
So if it is for the water pump then I would only turn it on when not hooked up to shore power and water, correct?

You would turn on the pump switch any time you want to use fresh water from your fresh water tank. Being connected to shore power or not, your water pump runs off 12V and will work fine either way.
Just a note, be sure your hot water heater is full before turning it on, if not, and your using it in "electric mode", you'll burn out the heating element.

When I hook up to water, does my water tank and hot water tank fill up automatically? Does the new water constantly flow through the water tank? And doesn't the water pressure from the inlet water hose make the sink and hot water work? No power of any kind is needed to turn on the sink, yes?
And, is it common practice to unhook your water, then use the water pump to drain the water tank, just to save travel weight?

The Tipper, from what I have read so far, it seems to me that you really need someone to walk you through all the systems of your A122. Where do you live? Maybe there's someone on the forum that can help you understand how everything works. It's not hard, but if you do some things wrong, you can end up spending big bucks for repair. Even if no one on the forum lives near to you, do you have a neighbor or friend who owns an RV? There are a lot of similarities even if the models or manufacturers are different.
