Switch next to fuse box? A122
Under the table, on the bench, under the fuse box, there are two toggle switches. Facing the fuse box, the one on the right turns on the water heater. Got it.
What does the one on the left side control?

Is it the switch for the water pump? We only have one switch under the table and the water pump switch is under the sink.

What year is it? Did you purchase new or used? If used it could be an add on or modification from previous owner. My water pump switch is in the location you refer to but I have a different model (a124). If it's the water pump switch you'll hear it run when you use the water from fresh water tank. If I remember correctly the older 122's do have the pump switch in that location.

It's a 2011. Yes, we bought it used. What a pain it has been to not have a good walk through educational session from a dealer!
It looks very factory installed.
So if it is for the water pump then I would only turn it on when not hooked up to shore power and water, correct?

You would turn on the pump switch any time you want to use fresh water from your fresh water tank. Being connected to shore power or not, your water pump runs off 12V and will work fine either way.
Just a note, be sure your hot water heater is full before turning it on, if not, and your using it in "electric mode", you'll burn out the heating element.

When I hook up to water, does my water tank and hot water tank fill up automatically? Does the new water constantly flow through the water tank? And doesn't the water pressure from the inlet water hose make the sink and hot water work? No power of any kind is needed to turn on the sink, yes?
And, is it common practice to unhook your water, then use the water pump to drain the water tank, just to save travel weight?

The Tipper, from what I have read so far, it seems to me that you really need someone to walk you through all the systems of your A122. Where do you live? Maybe there's someone on the forum that can help you understand how everything works. It's not hard, but if you do some things wrong, you can end up spending big bucks for repair. Even if no one on the forum lives near to you, do you have a neighbor or friend who owns an RV? There are a lot of similarities even if the models or manufacturers are different.

When you hook up to water tap at campground it does not fill fresh water tank. You fill fresh water tank from the other larger water fill area marked on camper next to the smaller garden hose connector for campground water. The water from campground tap does not "flow" thru fresh water tank.When you connect to campground water there is a valve that prevents water from entering fresh water tank and just supplies water to rest of camper and pump is not needed. If you are not connected to campground water then you use the pump to supply water from the fresh water tank. The hot water heater will fill from either pump or campground tap. To drain hot water tank you need to remove anode rod at bottom of hot water tank accessed from the outside of camper under the cover for hot water heater. Fresh water tank can be drained from valve on side of tank under camper. You could drain fresh water tank by running pump if you wish but it is more ware and tear on pump

Here's a generic plumbing schematic. This is probably correct for about 90% of all RV's. Depending on the age of your unit, you may not have the antifreeze connection.

Tipper, just incase you haven't figured this part out yet, you have two water supply options. The fresh water tank and the city water inlet.
The fresh tank is filled from a capped inlet on the side with a fairly large opening. (Not to be confused with the capped sink drain.) The water in the tank is fed to the plumbing by the water pump located in the cabinet under the sink. On my 2012 A122s the switch for the pump is on the wood protector in front of the pump. Some other models or years have the switch in a different location.
The city water enters through a male hose thread inlet on the side with the hose connected to the tap at the campground. Since city water is pressurised, this bypasses the pump and feeds the plumbing. It is a good idea to have a pressure regulator on the hose somewhere and doesn't hurt to turn off the tap when leaving camp for the day.
Both of these will feed the hot and cold faucets. If you are dry camping using the fresh tank, it is a good idea to prefill the heater tank before leaving for camp. Otherwise the first six gallons of the fresh tank will go into the heater tank and you'll have to lug another six gallons to camp.

I didn't see that anyone else mentioned this but in my camper the switch in that location is to turn on the water heater.

If it looks like this rocker switch set up, then it's your water pump.

Well easy to find out. Flip it on for a few seconds and if you hear the water pump then you know.

I doubt if we will ever camp without hookups, but you never know.
Without hookups you use:
Filled water tank plus water pump
Propane option to run refrigerator
Propane to use furnace instead of electric heatpump
Battery power for lights
