It jut keeps blowing pilot out and have to keep relighting, big poof when turning to to on from pilot

That means that your pilot is out of adjustment, and you getting what is called delayed ignition. The gas is filling the chamber until it ignites. Make sure your pilot hood is putting a flame on the burner itself.

So which way do I turn the adjustment screw u think, clockwise or counter clockwise to increase flame

I would think counter but just turn your gas valve to pilot, then light it and adjust it before you open the valve to gas. You might have bent it when installing the thermocouple to, You don't need a big flame but it has to hit the burner. If you adjust it to high you will cause a yellow tip to big that will create soot. Yellow tip no more then 1/4".

We just adjusted that and seemed to work, having trouble seeing because of sun, I appreciate your help

Check the flame tip at night, it will be easy to see, glad to help ya, have fun camping.
