Where does the gas go?

I've often wondered and never asked. If I turn off my gas at the bottles and come back a few weeks later and turn the gas back on, I'll have to run the gas quite a while before I can ignite my stove or other gas appliance. Why? Where did the gas in the lines go? That says to me that there is a gas leak somewhere, but it seems to be common to all RV gas systems.
