I took apart the fan and trim how can i test to see where water is coming from? the caulking is starting to crack? should i recaulk it? Do i just go over the old stuff or cut the old stuff out. i plan on using dicor self leveling

Cut out the old. If not it will still break down and the stuff you put over top of it will not hold up. It will start to break away.

Yes, you should remove all the old caulk and sealers before applying the new. Make sure the surfaces are clean and dry.
