Have you noticed any water leaks near or at the water heater tank?

Hot water can actually produce steam well below the boiling point through the process of evaporation. The temperature where that actually happens varies dependent on current air temperature and humidity.

FYI, your water heater is equipped with a Pressure and Temperature Relief Valve. That valve will open when the water temperature nears 210 degrees Fahrenheit or the pressure reaches 150 pounds.

Mine is super hot also. When it heats up with ac it's fine but when it heats up with gas, just as the gas kicks off the over pressure valve seeps a bit. Fine by me as I love the long showers.

I would be checking the hi limits on both 110V and 12V, they might have put the wrong or defective parts on at the water heater factory.

It seems like all the air did not get out of the tank but I let the water run before I turned the electric on. I took a shower and it seemed like air was still in tank, weird.
