The recliners could possibly weigh more than the dinette. How do I find the weight specs for the slide. We don't want to overload it.

Contact FR in Elkhart. It may take awhile to get an answer. I e-mailed FR concerning the Ultra leather in my Forester MBS, and it took about two weeks to get the answer. No one answers the phone, including the receptionist.
I have the Forester MBS and just ordered two Lambright Lazy-R Wallhugging recliners to replace the dinette. I can't wait. The 2016 MBS now has three options, one of which is dual recliners instead of the dinette. My Lambrights couldn't weigh anymore than a dual recliner. Once I begin installing them, I will post before and after pictures.
We use lap trays at home and camping. We have a picnic table if we need it, but that dinette is uncomfortable and basically useless for us.

We did that in our Berkshire. We removed the booth and the sofa. We replaced the booth with a table and chairs with a nice desk. Very user friendly and it gave us great extra storage. In place of the sofa we put in two wall hugger recliners and a table between. We had Brad and Hall in Elkhart do the work. We are very happy with it.
We have a Dream Dinette and will have the table cut down to 15 inches wide and 30 inches deep, which is just enough room between our recliners to swivel them around and eat on the table and to use the table for meal preparation. Another method to my madness is to place a table in front of the slideout on a temporary basis--again, for meal preparation.
If your dinette will support 2 or more average-weight adults plus chairs and table, why wouldn't it support 2 adults and recliners? My dinette slide is 38" deep. We've had over 600 lbs. of people on it. It still works.
We just went to Staples and got 2 executive office chairs. Very comfortable. The chairs are much lighter than the dinette assembly was. We use beanbag type lap trays and have a small collapsible table when needed.
You are absolutely correct about the weight. My slide is 43" deep and 68" wide. My recliners will fit in there perfectly. Goodbye, dinette; hello, recliners!
