2006 Cherokee Wolfpack, 5th wheel

Hello all. I am new to the forum world so please excuse me if I post in the wrong place.
I have recently bought a 2006 Cherokee Wolf Pack 5th wheel toy hauler. It is the fiberglass exterior, 33’ (+/-). I have begun to do some upgrading on it and needed some technical advice about insulation.
I need to update the camper for true arctic environments. I plan on starting with the insulation throughout (ceiling, floors and walls). I have already pulled the carpet in the bedroom area (needed to go, was not nice) and have hit plywood. Under the plywood to the left (as you look into the bedroom) was a sealed hole going into the propane storage area. What will I find as I pull up the plywood under the bed area?
Also what is the best way to expose the walls and ceiling to install thicker insulation? The research I’ve done so far is leaning to cellulose insulation. Would that be a good route?
I also have to heat, insulate and seal the underside while still providing maintenance access, any suggestions on this?
The temperatures here in south Texas get extremely hot, the temperatures where I’m going back to get extremely cold (up to -20). Either way insulation is going to help a lot with heating and cooling. Not using it in the cold weather is not an option; I need it to perform in both extremes, to include water usage.
Forest river's web site has not been any help. I have tried to find blue prints or schematics for the construction of the rig but haven't found anything.
