As long as you have the therm set to A/C.

Again press mode till the A/C is selected it should cool till the set temp is met or the A/C is maxed out.

As I understand it, the Fan modes Hi, Lo, Auto tell the fan how to act when the operating mode is set to Fan and/or Cool.

Too late again! ... and not quite right. Fan on Fan mode has no need for Auto, just Hi and Lo.

Mine does the same thing, but not frequently. I finally figured out that, with the AC on and the fan set on "auto", the AC will fire up with the fan on high. As it gets closer to thermostat set point, it will shut down and come right back on with the fan on low speed. It will likewise shut down and restart if the fan is on low and it gets to far behind the set point it will go to high speed.
