Perhaps you have a door seal leaking?

I would expect your unit to be a sealed system. Unlike charged systems that will freeze when refrigerant is low. My WAG is still on warm air getting into your unit.
Can you turn it off, defrost it, dry it and turn it back on for the required amount of time without opening it to test? Just shooting in the dark here...

My new Flagstaff is having the same issue with nothing in the freezer. Seal is leaking and ice is building up in one place where the air leaks in.
On a previous trailer I solved the problem by adding a piece of card stock behind the seal on he door so more pressure would be placed on the seal at that area. If that doesn't work I'll take it to the dealer and wait while they get around to fixing it.

How much ice/frost?
Not uncommon for ours to develop ice on some of the fins and a bit of frost on the freezer sides in a week. Normal on a non frost-free refrigerator.

With that amount of ice you are either dehydrating the food in the freezer because it's not properly wrapped/sealed ; you are opening the door too often and letting in humid air; you have a door seal leak.
If the door is leaking you will typically have a small area where frost is extending up to where the door seal begins.
In humid climates it's best to open the door only when necessary and no more than needed.
When the door is closed and properly sealed some frost will form as the humidity in the air is frozen. Once that happens it's going to take some more moisture entering the freezer to form more frost/ice. Only three possibilities. Frequent door opening, Food not wrapped/packaged/sealed properly, and door seal leakage.

Geesh... if you are getting 1-2" of frost/ice buildup in a WEEK you must be living under water. That's a tremendous amount of moisture.
Seriously, if your seals are good, I don't know what to suggest??

Working or not working, that much ice means somehow there is a lot of moisture getting into the freezer. You said you checked the door so the only other possibility is it is opened too often in high humidity.

I find a little fridge fan helps with this issue a LOT. The fan not only circulates the cool air, but helps with moisture production from opening door or contents of fridge.
I still get frost build up on the thermistor side on the fins after 3-4 days, this is pretty normal IMO. I do try to wipe off condensation on bottles and other items before placing in fridge. I also wipe off any interior condensation.
Also try turning the fridge temp down. Some have had issues when keeping the fridge temp on the highest setting. If I leave my Norcold on highest setting for more then 2 days, its so cold it freeze contents of fridge as well. I start at 3 and turn it down to 1 after about 24 hours.
