So the process over the sink was to remove microwave first it is just held in with the 4 screws in the front and the plug. Then take out the divider. The thin board is just held in with small staples it pops right out. I tapped into the hood light with some 12 gauge wire and ran it to the center of the counter top so it was centered to the window. Really wasn’t that bad.
For the light above the table I did the same thing just ran power to the radio memory power and ground. Drilled some holes into the support braces in between the boards and that’s about it.

The range hood wires run into the wall directly behind it. The second pic shows it. I drilled a hole in the lower section of the cabinets close to where they go into the wall to run my wire.
