Hot Water Heater

I just noticed this today and need a little information / advice.

I went to work on our Cherokee 28A+ stabilizer jack today. While working on it I could hear water in my hot water tank sloshing around. I decided to see how much water was in the tank so I removed the plug on the side and the had to be full.

After our last trip 3 weeks ago, I disconnected the city water line, flipped on on the water pump and then turned on both the hot and cold water values in the kitchen sink to drain most of the water. Should this have not drained my hot water heater tank?

What is the right right way to drain the hot water heater tank of most of its water when completing a camping trip?

Unscrew the plug on the heater tank from the access panel outside.
Pull open the (over) pressure release valve.
