The difference between gr. 27 and gr. 31 agm batteries is indeed the size.
If you have a battery monitor connected then entering the AH let's it predict the available capacity, runtime etc. If you have a more sofisticated charger then inputting the battery parameters tells it how to charge the batteries most efficiently and most importantly charges the batteries correctly.
