We level when we unhook from the truck and that is the end of that.

Seems to be some confusion here as if you have the electric stabilizer jacks one can not relieve pressure from one side of jack. When they do go down a most times not at the same time. One can touch ground first before the other side. One both sides touch and you here the strain hold button no longer than two sec per manufactures instructions. Holding button longer can damage motor or bend stabilizer components.
Some models have separate stabilizer probably not electric and you put one side down at a time. These systems are not to be confused with leveling jacks two different animals.
Now I do as most mentioned check level of trailer first usually the side with two slides is going to require a 2x6 board to raise slightly off lever. I then put down stabilizer jacks and then the slides. Now everything is level. Later RJD

In 22 years with my old trailer I didn't find it to be an issue. Can't count the number of times I'd pull into a rest area, look at the giant level indicator on the front of the trailer, and if only an inch or so off I just climbed in and went to sleep. The refer worked fine. Some campsites, especially when boondocking, were almost impossible to get perfectly level as I could only carry so many boards. As long as I got close that was it. Stayed that way until I moved. Again, no refrigerator problems.
As for the slide on my new Flagstaff, I level trailer with stabilizer jacks down FIRM and then run the slide out. Level doesn't seem to change any noticeable amount. I think the key is to have the jacks down firm, at least on the slide side.

In my experience, one-inch off isn't enough to affect the fridge. It does, however, affect my wife who can sense if the trailer is more than about 1/4" out of level. If the bubble on the level I use to test isn't almost dead center she will ask me later (without having seen the level) why the trailer is "crooked."

If you don't have an auto-level system, then you need the LevelMate Pro.
When you first set up the LMP, you do that at home with the slides out, the unit loaded as it would be when camping and the unit leveled. When you arrive at the GC, the LMP phone app will tell you which side(s) are low and how much to raise in 1/4" increments. Works with a tag, 5th wheel or drivable. Best $140 I've spend on the RV in a long while. Available on Amazon.

I will extend my slide to load on a unlevel roadway. It is not that far out. In reality are you going to level the unit at rest stop first and then deploy the slide? Or grabbing a cold bevy for the road at the filling station?

I set up about an inch high on the side with the slide, it then ends up level.
It is important to remember that all of us posting may not have the slides like you have. Some may be heavier, or lighter, or have multiple slides that balance each other out when opened.
