I am wanting to know at what temp i should be concerned about freezing in the holding tanks while camping and using the plumbing. Or should i connect to a sewer and drain them out as being used?
Any information will be useful.

32 degrees is no cause for concern in the holding tanks...especially if they partly filled. It would have to get quite a bit cooler than that to freeze them, and for an extended period of time. Most frost nights the temp only drops to freezing for a short time and as soon as sun comes up the temp gets back above freezing.
It's much more problematic to keep your drains open because then you can develop problems such as the "poop pyramid" in the black tank. You want plenty of liquid in there.

If temps are forecast to be 32 or below, it would be prudent to disconnect from campground water until temps rise in the morning.

Since I am a new travel trailer owner wasn't sure if maybe hear from the interior would radiate down to the tanks and help protect them from freezing.

It not so much the tanks as it is the valves IMO, I am sure there is plenty of room in the tanks to allow for expansion without issue.

The pipes and valves may not be able to handle it because the are more rigid.

Never leave the black tank valve open when in use.
