Where did the water come from??

I ave a seperate galley tank and it was drained the last time out a couple of weeks ago.
The drain valve was very hard to open, so i decided to try to lube it some.

Pulled the drain valve open and heard a rush of water come down -- the cap was still on no probelm. Lubed the rod and then placeda bucket under the drain to catch the water that came thru when i opened the valve.
i then released the cap and discovered three things.
1. There was more water than i thought
2. the bucket was not under where I thought the water would fall.
3. It smelled really bad.

So where did the wate come from -- or i guess why was it there.
The last drain was done till the water stopped flowing and I had the rig
level. Why did it not all drain?? And why would it smell so bad. Would just sitting for a couple of weeks do that?

Thoughts appreciated.
