Another update,

I changed out the ECO this morning and we now have electrically heated hot water again.

And, there are still no problems with water leaking past the water pump bypass valve. So for now at least we're in good shape.

I use a routine that has me shutting off the power at the water heater using the hard to get to switch every time we are packing up. When setting up I release water from the pressure relief valve that shows the tank is full. After confirming there is water in the tank, I turn on the power.

Good system and is pretty much what I do now. I have started shutting down via the switch.

You can add one of these to your shore power plug to remind you to shut off water heater when disconnecting from shore power or before connecting to shore power. They come in various sizes as small as 4-5" and have a attachment clip.
