I favor the floor plan and feature set of the 2507, but the Coachman freedom express 248 is a nice Azdel built option.
I'm even giving the Lance 2375 consideration. Lance does the Adzel in both exterior and interior walls.

I tend to overanhlize as well. Ask yourself this?
What roof material does Coachmen uses?
Are the slide walls made just as the rest of walls, what about the roof?
What axles does coachmen uses, how about suspension?
What steps does coachmen uses?
What about the countertops, are they solid surface?
Is the entire trailer aluminum frame, to include dinette?
What is the floor made of?
Max Air vent fan?
Sink stainless steel?
Are the cabinets drilled and screwed or stapled.
What’s the density of the foam used in the furniture?
Do they use plywood or OSB?
You want to consider resale value, pay attention to what people will see and how the entire trailer will hold up, not the fact that there isn’t azdel in the Fiberglas sadwitch, that Rockwood was one of the first if not the first to build trailers like this. I crawled and overanylized hundreds of trailers, Rockwood beat them in almost everything.
Good luck and I hope you enjoy whatever trailer you end up with... we love our 2509, similar to the 2507 but with bunks...
