You already said you can live with only one AC. You also said that after «switching» power cords all your appliances, plugs, etc. but the 2nd AC, were running OK.

My 5¢: Leave it like that and ENJOY your stay. You'll fix back home.

In the meantime, do the readings that wmtire recommanded.

Back home, take time and try to understand your electrical setup and, if needed, come back on this forum to get answers to your questions.

MH's going to default to generator if u run it while plugged in.... You are NOT going to get the benefit of BOTH shore power and the generator....

Also - you're not going to be able to run both AC's off 30 amp....

that itself is also a common misconception: YES, you can run two air condtioners off 30amp rv service, people do it everday, and I have several times recently.
