More questions....

Had our first trip out and everything went really well. We stayed at a state park about 30 miles from home but didn't end up having to run back home for anything and only went to town for more firewood.

I did figure out a few things though.

1. My 15ft hose won't fit in the tube it came with. I will probably fab up something.
2. Most Nebraska state parks don't have water at each site.
3. My power cord was barley long enough to reach the box so I need to look into a 30 amp extension cord.

We have another trip at the drag races this next weekend where we won't have any water or power. I am about to place an order for one of the Champion 3100 generators but what about water? Am I OK to fill the tank up and drive with it full (we are going about 40 miles)? I parked it with about 1/4 of a tank of fresh water today, should I drain and refill. If it is ok to leave it for a week, how long is the "shelf life".

You are fine taking on water and driving as long as you keep with in the weight allowed. On the left side of your W&P there is a label that will tell you what a full load of water weighs. Keep that in mind. And yes, a week is no problem at all. I would suggest draining the tank if you do not plan on using it with in a few weeks. Little bit of bleach will kill any mold issues too.
