bad battery

As your battery ages,deposits of lead sulfates fall to the bottom of the battery. As these deposits build up over time they build up between the lead plates . Once they build up enough they will short the lead plates to each other ,causing a rapid discharge of the battery. This causes a lot of heat and very flammable gasses.

Distilled water only EVER and it is not evaporation, you are boiling the liquid out and the only way to control that is with a proper charge controller or maintainer charger

Mineral oil was used effectively in the past in INDOOR STORAGE BATTERY applications where old style chargers could boil off the water. It is unnecessary today in those applications and as others have pointed out...destructive to battery capacity in moving and tilting application where the plates WILL become contaminated...or frozen destruction northern climates.
I still disagree with the notion of leaving ANY kind of charger...trickle or modern 4 stage... plugged in and running for many weeks or months unattended. Simply charge the battery to 100% and you are good for 90 days at least if you simply disconnect the negative wire. Self discharge in even VERY warm climates is 10-15% a month. I had a friend in Maine who left a fully charged older battery sit from January till September when he remembered it....it still had about half its' charge as I recall. You won't get that in FL or AZ...but 90 days should be a no brainer.

Check the battery voltage when you are charging during long term storage. Should not be greater than 13.2 volts. Higher voltage can damage battery.

So. I'm still learning about this battery system. If I'm plugged into 30 amp for let's say a week (vacation). Is it ok to do this? Or will it damage the battery?

I leave mine plugged in 24/7 365 since August of 2011.

The issue is not the 30 amp AC connection. That is normal. The issue is the converter/charger. It must cut the charge back to not more than 13.2 volts for long term. If it does not do this you can unplug and disconnect the battery or get a converter that does reduce the voltage.
