I had that problem with our 2010 Roo 23SS. It’s called delamination. I was the 2nd owner (bought the previous Spring) and it was 2 years old at the time. I contacted Rockwood’s warranty people and they offered to send new door “cores” (no hardware and no edge trim) at their cost if I was willing to have the local Rockwood dealer do the replacement work. I agreed. The re&re cost me about CDN$1000. Your Roos are much further out of warranty so you likely won’t get the same offer but Rockwood may still be able to sell you replacement door cores. There are some websites out there that have pics of people restoring the doors themselves but that is way beyond my skill level.
My problem was poor design of the sealing system and poor construction practices at the factory. You need to make sure you keep the caulking around the door frames in good condition and make sure the pinch welt seals around the door edges are kept in good condition and seal properly. On mine, the screws that held the door frame in the wall weren’t put in straight and weren’t countersunk which meant the pinch-welt seals couldn’t completely seal the top of the door. Plus the exposed hinge on the bottom seemed to wick water in.
I sold it the next year to a guy who said he had an indoor storage place for it. I think the problem was mostly resolved with new pinch welt seals around the edge of the door but I couldn’t stop worrying about the possibility of it leaking again so I decided to sell it. We wanted a regular TT at that point anyways for easier setup, a bigger bathroom and not having to crawl over my DW to get out of bed.
Here are a couple other threads for information.

Other than the bed door delamination issue, we had no other issues with that Roo and really enjoyed it. We took it to the Canadian east coast for 3 weeks in 2013. As you can see from my signature, we bought another (used) Rockwood trailer as its replacement so I’m generally very happy with the Rockwood brand.
Good luck with your repairs.
