Roof, seals, etc.

I asked a local service shop to check out the seals/caulk on my 2011 Roo. They said it's all going on the roof and around lights, etc. and needs to be replaced. They want to charge me $500, where the sealant material (name?) is only $50 I believe? How can you test if it's really going and how easy is it to remove the sealant and reapply with new?
