Loraura, your idea seems the easiest and most secure for stops enroute compared to my current method of putting them in the truck bed, but there's one problem... Our bikes are inexpensive department store types and only one of them has the quick detach front axle. Is there a conversion kit available?

Bolt on wheels still come off you just need a wrench. It's a bit complicated to convert a bolt on to a quick release, but you might check with a local bike shop and see if they can help you.

We especially like that the bikes are secure from thieves (Moreso than in the truck bed) and out of the weather.

Here is a cheaper alternative to Thule or Yak tracks:

Proline #ES Roof Top Track Slats

I used them on my last truck.

joshuaerdman, see my post #5 and his response in post #7. He used Thule's TB42 (42" long) Tracks and Rapid Podium Feet. Yakima has similar parts.
