Installing laminate flooring is a very common mod in the Class 'A' world. I have a 5er that the PO replaced the vinyl portion of the floor with laminate. He did a good enough job that unless you look really close, it appears to be factory installed.
Your biggest issue, as I see it, is going to be getting clearance between the thicker laminate floor covering and any slides you might have. Really not sure how you can address that. In my camper, the area in front of the single slide was left carpeted.
