Here's a few suggestions:
Branson, MO (Country music, Silver Dollar City amusement park, antiques)
Door County, WI (Wine, fish boils)
Colorado Springs, CO (Pikes Peak Cog Railway, Garden of the Gods Visitor and Nature Center)
Durango, CO (Durango & Silverton Narrow Gauge Railway)

Colorado Springs, CO or Moab, UT - great and easy hiking trails in both areas. There are also locations to give the kids space to run and play.

Check into Ouray,co I go to that area every other year for 10 days. It's known as the Switzerland of the Americas plenty to do and some awesome views. I live in the st.louis area and it's a 24hr drive for me with stopping for fuel and food. I would recommend doing a little homework if your planning on stopping. I would try to avoid Denver during the rush hour.
