At that time of year, I would not go north of the I-40 unless you are OK with spending an unanticipated week stuck in a blizzard. Nor would I want to drive an RV with any semblance of snow or ice on the roads.
KOAs are excellent for beginning campers. Sort of the same way Holliday Inn was back in the day. More than good enough.
Plan your fuel stops if you can. Remember you can't just pull into any old station and get back out. I used to use a rule of fill up at 1/2 tank. Now that I've switched from a motorhome to a travel trailer that doesn't work so well with the 20 usable gallons in the TV's fuel tank.
As a resident of the great state of WYOMING I too suggest the southern route. I-80 can be brutal as any trucker can tell you. There are times I-80 has been closed from border to border for days. Last winter it was closed 2 days.

I live about an hour from Kernville, and I agree with the poster warning about the wind. The temps in November will be beautiful, but the winds can be a nightmare. If you are interested, the Kern Brewing Co. has a restaurant and their Class V stout is delicious!🍺
I just played with this for a motorcycle ride from MN to the Custer battlefield. It was really cool. Need to investigate it a bit more, but I was impressed
