You could stay on I80 and take 191 to Jackson and then head north to Fishing Bridge. No real mountain driving to speak of. Or you could take I80 to 287 to 89 north. You will cross a 9600 foot pass, but it is more just high country than mountains. Beautiful views of the grand tetons after you cross the pass. Be aware that there will probably still be snow around and it will be cold. The elevation at the campground is 7,750 feet. It can snow anytime at Yellowstone, even in the summer. Check for road closures due to snow in the park before you leave and along the way out there. Maybe you will get lucky and next May will be warm.
