New '03 Roo owners in search of mtb adventures

My wife and I just bought a Craig's list M21 Roo camper (our 1st) in our local area. Bought it well under list so we feel hopeful about the repairs it needs. It is sitting on original 2002 rubber with good tread so we know it has spent most of it's time parked. Very clean inside and all of the appliances work and look great.
Ordered new Carlisle radial tires (after serious study, debate and reflection) for less than half the price of the Maxxis (my preferred mountain bike racing tires btw) for it along with materials to seal it up (Geocel Proflex RV) and repair some old water damage (Git Rot) in the storage area. It needs some new plastic bits outside which I'm tracking down piece by piece, but the interior looks and smells almost unused, the bunks are dry, and mildew free. Roof is well sealed and no silicone anywhere so I'm very hopeful. I've already started removing the old decals (flakey and mostly gone with black adhesive left), GEO Method(ed) and cleaned out the black tank. Running a small heater and fan now to dry out good for a warm day to treat the storage floor. It is winterized but plugged in so I can keep my beer cold while I work.
I'll be pulling it with our '06 Suburban and bought a Reese SC WD hitch and P3 brake controller at eTrailer.com to get there safely. I've pulled a lot of gooseneck horse trailers over the years so that experience helps.
We have big plans to pull it to Utah this June for a family mountain bike trip with our two kids when they get out of school. Already have our itinerary set for the trip out, most camp spots reserved in state and national parks with lots of fun planned and room for flexibility on the return trip.
I've already spent countless hours stalking this forum and studying the valuable information found here. So thankful for the benefits you all have already provided! We plan to do a shakedown trip in March and then a few more long weekend trips before the big adventure in June. Looking forward to finding our limits boondocking since we'll be doing this quite a bit. We've been tent camping together frequently ever since we got married so this is a huge upgrade.
I look forward to learning more as we travel down this road.
So my first question is - who do you recommend to make a retro style blue and white striped awning for our shredded old AES Sunchaser awning (hardware all looks good and operates)???? I've looked at the regular replacements availabl,e but the Mrs wants something different...
