Since the Apex you're considering has an empty weight of about 4,300 pounds and maybe about 5,500 or so fully loaded, you are well within limits. Your door sticker says 1,500 pound cargo weight capacity and it's probably somewhat close. However, you will not know the real capacity until you get an actual truck weigh (via a Cat scale or similar).

But, with 600 pound tongue weight, 500 pounds of of people and stuff, you should still be within truck limits.

our 2014 Silverado 1500 w/ a 5.3L GVW 7200lbs, had a towing capacity of 9500lbs. We hauled our 29'6" Windjammer fully loaded (7100lbs) without any problems...you just go a bit slower up hills...oh-well.
The only reason we now own a 2500 is that we are planning on moving to a larger TT or 5er.

My suburban (2004 with 5.3l and 3.42 rear) pulled a Cherokee Grey Wolf 21rr toy hauler just fine except for the Black Hills of SD. It made the hills but I was really, really, slow going up the mountains. The toy hauler was rated 7,000 pounds max and we have a 2012 HD electra glide classic. This is just to give you an idea of what you could possibly do.

Welcome to the FRF! I had a 2006 1500 with the 6.0 and it pulled my 21SS fine. I would say try to stay under 6000lbs. Once you have it loaded with camping gear you could be close to your towing limit. flatland towing won't be an issue.
