Converting Bunkhouse Slideout To Storage

We just purchased a 2008 CC Silverback 5th with rear bunkhouse. I want to convert one of the slides from the jack-knife sofa/bunk to storage.

Has anyone done this?

What tips do you have?

I was thinking of 2 pantry-style units on the left and right side with a countertop (lightweight) in the middle to serve as a desk.

If you have some carpentry skills it shouldn't be to hard but remember to use light weight construction on the cabinets to save on weight. Only problem could be loading the pantry down with heavy stuff such as full of can goods.
