The baking sheet idea sounds pretty good. It would prevent steam and stuff from getting to the bottom of the cabinet and would be really easy to clean.

That's totally strange. My range hood has an ugly sticker on it warning about the perils of cooking without the fan (which DOES exhaust outside) and carbon monoxide build up and all sorts of terrible things.

Is your stove in an unusual place so that it can not be vented outside?
I have a front kitchen vlite, no vent for the range hood. Given the dire warnings of death, isn't this a safety defect?
