20 lb tanks are everywhere BUT I don't exchange them.
I get mine re-filled and the re-fill stations are fewer
and farther between now days. A few years ago gas
stations had LP re-fill stations. Now they have exchange
cages that save them the expense and trouble of a big
storage tank and pump and scales and having to go
outside in all kinds of weather to fill your tank.
Now you just trade in on a full one but you pay extra for that.
Even if you're boondocking you can't run your LP furnace
a lot because it sucks battery juice like a kid sucks
cool-aid on a hot day!
No you can't use an electric heater when boon docking.
Around KY all state parks have electric hookups so we
can use a little 1400 watt heater in cold weather.
I've camped in National Parks and used my furnace also.
We can get about 4 nights and then it's time to get out
the Honda and re-charge batteries.
Last fall we spent a week at Cumberland Gap National
Historical Park. We stayed in a loop with no hookups
because the electric loops were crowded.
Our site was all alone! The CG fee was less. In a week
we saved more than enough to fill my tanks and we
used slightly less than one 20# tank. I charged batteries
one time.

LP Tank size is up to you. I don't think the increase in
weight will be a big issue but that's a guess.
My water tank is right in front. I typically don't tow
with it more than half full. I have towed with it full
but not as a rule.
That is your choice, you will probably know if the CG you're
headed to has a water spigot or not.
My trailer actually needed some extra tongue weight when
new. The 2 LP tanks and 2 batteries and half tank of
water seem to cut down on sway. My WD hitch keeps
me level even with the tongue weight.
