I think food stocking is just a matter of preference and what works for you. I grew up camping with a mother who always had everything and we always had lots left to unload when getting back home. We camp with some friends who never bring much along but go to the store daily for what they want to fix. Then we have the friends that pre-prepare and freeze meals for the year in advance.
For us, we don't leave much in the camper, we had tent and pop up for 20 years so we still only pack per trip.
Some trips we just want to relax so we only take quick meals and other trips are big cooking trips. Plan the meal and try to remember everything down to the spices.
Crock-Pot meals are great too, you can fix almost anything in there.
Don't forget drinks; coffee, milk, lots of water (some places water is horrible even with filters), beer,
and tea or soda for the splurge!
Marshmellows, chocolate and Graham crackers are a good keeper too, always fun to burn them up over the fire!
