There should be a metal backer in the wall for the table mounts to be screwed into. You should be able to locate it with a stud finder. Our trailer was an early one and the plate was in the wrong position so the screws only went into the luan. Rather then send it back to be rebuilt I epoxied screw inserts into the holes and we haven't had a problem since. If you go this route just be sure the inserts and screws aren't too long as the walls aren't very thick.

Thanks for the reply Keith, we learned after the first trip always put the table down before traveling, but I guess we have the same issue with the metal backing plate, it's either not there or it's in the way wrong spot because neither the top bracket or the bottom bracket have anything to bite into other than the Luan & Styrofoam... I actually found a really good fix though.
Went to home Depot And got these hillman pop toggles for 1/8 - 1/4 paneling, they worked perfectly with the factory screws and it feels like the whole piece of Luan will pull off the wall before the screws pull out. I've attached a picture of them. They were a little tough to install because the Styrofoam in the wall wouldn't let them expand so I had to use a drill bit end to force them open since the included plastic pin kept bending.
