Boneless chicken thighs over wild and brown rice with onions, mushrooms and garlic in chicken broth. Baked in a covered cast iron skillet till done. Removed the chicken skins and enjoyed with green beans on the side.
Sounds healthy right? Yeah, it does. What ruins the healthy part is when you take those chicken skins and pan fry them til crispy and add a little salt. Man! They were good!
