Your dates are on a 3 day weekend so be prepared for some crowds. Hit restaurants at off times from the masses, especially dinner.
The view from the bar at the top of the Rio is a great view up & down the strip. For low cost fun check out the Courtyard at Harrah's Las Vegas. Outdoor gaming, bar and entertainment at night. (Full disclosure: I used to work there.
Right across the street is the Forum Shops that lead to Ceasar's. Must see.
Lots of great restaurants, just depends on your budget, tastes and plans. Use the concierge at Luxor to get reservations. You can do this in advance of getting there. They are part of the MGM group so they have access to a lot of properties.
There is a tram system on the east side of the strip if you get tired of walking. On the west side from the Luxor you could get it at the MGM and get off at the Venetian or Harrah's. It turns and goes to the convention center so past those stops not of interest. Some of the properties on the west side are linked with their own systems for no cost.
There are 1/2 price show tix outlets near Planet Hollywood. Ask a bellman at your hotel. These sell same day tickets so set your schedule to be flexible and have multiple options. When we did NY trip we had reserved shows for must see and then hit the same day discounters to fill in.
