A couple of observations...
That trailer was being towed by a Ford Excursion, a 3/4-ton SUV. Can't tell which engine it had, but with the V10 the max tow is 10,000lb and the diesel is 11,000lb.
There is no way to tell from the video if it were overloaded.
The problem was clearly speed + poor or no sway control. It's videos like this that show the importance of having decent sway control and not speeding down hills.
Also likely an example of what happens when you don't do your homework and lack experience.
I wouldn't blame this on being overloaded or because it was being towed by an SUV. That SUV is a beast.

So, if one DOES begin to lose control like that, what do you do to try to regain control? Let up on the gas??

Let up on the gas and apply trailer brakes only if possible....my take on it.

You'd need to catch it before it got that bad. You can control sway to some point by getting the trailer to go slower than the truck. i.e. hit the trailer brakes. This forces the trailer back in line as it becomes a drag on the truck. But this only works while the wheels of the trailer still have traction. Getting to the point in the video where those wheels started bouncing around, the only thing left to do is hang on tight and hope you come out of it alive.

Yes... Let's scare anyone with an SUV who decides to carry stuff on the rear by telling them their vehicle is inadequate.
You can't paint with that broad brush. There was a whole lot wrong with that situation including stuff we do not have information about to make a qualified judgement.
A SUV with proper ratings can tow a properly loaded & balanced trailer that is within spec of those TV ratings.
The Title of your post could have been...
- This is what can happen with excessive speed.
- This is what can happen when you pass a big rig (did you see the vehicle get pulled in as it passed?)
- This is what can happen if your rig is not properly balanced.
- This is what can happen out in the open with high winds.
But it shouldn't be... anything about towing with an SUV. Especially that SUV as a previous comment indicated.

Yep, the title will distract the thread. Most won't discuss the content of the video; most will debate your assertion in the title that there is something inherently inferior about towing with an SUV. Words matter.

I've got an 01 Excursion with the 7.3 and just to clear this up, it's 10K max tow cap, just like the V10. As per my manual.
I see a loose steering box too much speed and out balance condition. Disastrous recipe.
My first instinct would be to reach down and actuate the trailer brakes, slow down and regain.
Pull over and camp.

The later years had the diesel max tow increase to 11,000lb. I know 2005 models were 11,000lb, but good to know about the earlier years.

At that point I don’t think there is anything he could do that would help.

It looks like that trailer has no sway control.
It also appears like they tried to cut back in way to soon, saw the mistake and over corrected.
Blaming this on an SUV is wrong.
Even a truck or dually could easily end up like this if set up the same and driven the same.

I tow with a 2000 7.3 Excursion and can agree the steering box is prone to loosen and leave the driver with a sloppy steering wheel. This video reminded me I need to tighten mine up before the next trip. As for the tow rating on these beasts it is a little south of a three bedroom house.

This almost happened to me.
I made a mistake and reached for something in the truck and inadvertently turned the wheel in the wrong direction as a gust of wind hit the trailer from a passing vehicle. Luckily, I slowed down and was able to steer it into submission. Forgot to put on the trailer brake.
Lesson learned. Inattention can get you in a world of hurt.
