For stabilization we use BAL X-Chocks, trailer is rock solid when they are on. For leveling I go with two boards, one 2 inches and the other is 1 inch, cheap and simple.

Most trailers have a fresh water tank drain valve or drain cock. It is usually mounted on an angle to the tank so you should be able to empty the tank. I have never had a problem with winterizing....
