To follow up, I went to our local Basspro and bought a 10 inch deep that holds 5 quarts. I was thinking it would be about right to do a whole chicken. There are only the two of us and I thought this would be a good size. Besides, if it turns out too small, we can always get another one that is bigger. Looking forward to trying it out.

We use ours on every trip out.
WalMart sells DO liners that make cleanup even easier! Parchment paper cut to drop into the DO I think.

I am so excited to see this thread! I was in Goshen last year, and attended the class for cooking in a DO....things like pineapple upside down cake, peach cobblers....even a meat loaf! I was amazed how easy he cooked them on the ground, only sitting on a pile of hot coals, with hot coals on the lid! It was delicious!! I am learning a lot here, from everyone's experience and preferences in how to cook so that clean up is easy. In Goshen, he had a pie plate that fit inside the DO, and used some kind of tool that allowed him to clamp the pan to put it in and out of the DO so you don't burn yourself.....can't recall the name of that tool. Anyways, he pulled those cobblers and meat loaf out of the DO, and no mess at all! Now that's campsite cooking! I would love to learn to cook a stew in one!

Some State Parks offer DO cooking classes. Something you could check into if you're near a State Park.

If you want some good recipes go to scoutorama.com lots of good stuff.
when it comes to how much coals I play with that part. After a a few try's I think you get the hang of it.

One thing to remember to get also is a Dutch oven lid remover. I like the one that has the handle and lever on it. Holds it really well

I have many DO's now. most have been people leaving the state and giving them to me. my favorites are a pair I got for Father's day a few years back. 12" aluminum with legs and a 10" aluminum without legs, (have a seperate little stand) small oven nests inside the large one with the stand inside and the small lid upside down. I put it all in a dutch oven bag with lighter, dutch oven plier ( boy scouts have the best one for less than $5.00) tongs, glove, and a small bondo spatula for wiping it clean. the whole thing weighs less than one 12" iron DO. I use a 5 gl bucket with a screw top lid for charcoal, newspaper, lighter fluid. bucket boss on the outside has pockets for utensils, etc. Camp chef new sells a small table top dutch oven stand that is 16" square.
