I love to cook. Today I made a roast in the crock, boiled down a chicken carcass for homemade chicken noodle soup to be finished tomorrow and grilled about 8lbs of salmon on the grill. Tomorrow is cold smoked salmon deviled eggs.

I didn't mention that to brag (maybe a little) but to lead to this...

A vacuum sealer and some prep before camping will set you up to win. It's rare for us to find a restaurant that will serve us up better than we can do for ourselves so we mostly eat at the camper with a few deviations of special local attractions related to food.

Raw: I pre make burgers and vac seal 4 to a pack. Vac steaks. Shrimp. Salmon. Chicken in marinade. Chicken wings. Pre cut steak for shish kabobs.

Heat and eat (already cooked but frozen) from the vac sealer and other: shish kabobs (just throw the mess in a pan to heat up...maybe mix in eggs for breakfast), cold smoked salmon, hot smoked salmon. Smoked turkey noodle soup. Chicken noodle soup. Roast. Grilled shrimp (excellent cold). Home made spaghetti sauce with balls.

The added bonus with doing this is being able to control the size and shape of the packages allowing you to maximize freezer and fridge space.

Anyway, to directly answer the question we decide while on the road what fits in with the current day and pick a winner from our supplies.

Food...

Anything that can cook quick, even if we have to use the microwave. Once the campsite is established the cooking begins for real.

I usually make a big batch of meatballs to take along. When we get there, I take out enough for a couple of meatball subs. Heat with a jar of spaghetti sauce and put on a sub bun. Meatballs can be used for lots of things. My go-to make ahead meat.

Dutch Oven Meal

I know this sounds like a bit of work, but it's become a tradition that our first meal at a new campsite is a pizza and a cobbler cooked in my dutch ovens. I usually pop open a bottle of wine after I get the coals and ovens going and sip away while it all cooks.

When we know are going to have a long day driving we make what we call "brownie stew".
From brownies and girls scouts.
My mom was a leader from my older sister and it an easy and simple cook out meal.
Brown a pound of hamburger meat, theN put a can of tomato soup in, a can of drained kidney beans. Once warm serve.
Takes about 10 minutes.
Bottle of hot sauce on the table, bread with some butter and it is GREAT!

On those long days I love the Rv parks that have food. We had one KOA in Mn. We ordered some food at check in and by the time I got the awning out and a beer there was a golf cart pull up and drop off our hot supper. It’s junk food but on those days you are totally spent it’s the best.

The cobbler is in the big pot and the pizza in the smaller. That's the way I do it when cooking for two people. That way we have leftover cobbler for a few days. If I'm cooking for more people, I'll make the pizza bigger and the cobbler smaller and we'll finish it all off that night. :-)

Leaving tomorrow. Got #5 of beef stew in containers made yesterday.

Chicken strips and French fries(frozen). 30 minutes in the oven.

Box of spaghetti. Bag of cheddar cheese. Can of skyline chili. Chopped onion. A can of pinto beans. Bottle of Luisiana hot sauce. Chili 5/ways.

Beer, wine, club crackers, salami, Vermont cheddar(Boars head)

I get a rotisserie chicken from Costco before the trip. It is great to put on salads and make sandwiches and last for a few days. You can also then make chicken soup with the left overs.

On travel days it’s normally eating out or microwave a meal. Hormel meal and microwave rice. Quick and easy, no mess, what you don’t eat goes in the trash. Plus eat with plastic forks and spoons on paper plates. That way we both rest after a long day traveling
