Pancakes

Has anyone ever pre made pancake mix and taken it camping? If so how long will it last in the fridge?

We bring then "just add water" Bisquick mix and pour container.
It is good even past its "Best By" date as long as its not opened.

My wife makes it from scratch in the RV (buckwheat pancakes, so good). Not much to it. Our fridge is usually too full to add more anyway. LOL

Cast iron griddle
Coconut oil on griddle

1 cup Hodgson Mill Buckwheat flour (best texture we've found)
1 tsp baking powder
2 tbsp sugar
1/2 tsp salt
1 egg beaten
1 cup milk
2 Tbsp melted butter

She substitutes coconut milk for the dairy milk
She doesn't add the sugar
Instead of 1/2 tsp salt she uses 1 tsp salt

Love it with blueberries or banana and coconut.
Real maple syrup as well.

We just buy the powder stuff and add water to it. Doesn't take up much room in the pantry and makes a crap-ton of pancakes (which, with 2 kids who seemingly eat like adults sometimes- it is needed!).

DW does this every time she makes a dry mix with us and mix the wet stuff the morning of that holds up for two mornings never tried a larger batch than that.

We tend to bring the Bisquick "add water and shake" mix when just 2 or 3 of us. Any more than that and we use Hungry Jack. Since buying a batter dispenser we will probably start making from scratch or just out of the box, it's just that darn fun to use. http://www.amazon.com/gp/product/B00...ilpage_o01_s00

Never have especially with the cracked egg, not a mix I would leave for long. We stick with the pre-mix and add milk/egg/oil and go. Top with cooked berries or sliced fruit and kids think they are in heaven. We also top ours with yogourt...

In the recipe above, keep the milk and add a tablespoon or so of vinegar to the milk and let it sit for 5 minutes or so to sour it. That will make for fluffier pancakes.

The kids also like a dash of vanilla extract for a slightly different touch now and then.

If you pre-mix the dry and pack in the wet you can just about do a shake and done using a saved shake and pour container but I still prefer to slap it all together on site.

BTW, if you use the vinegar trick be sure to stir and not shake. If you shake it you'll probably be wearing it!

Use the the "just add water" kind and add some fun. Use kool-aid instead of plain water to make different color pancakes. First time I made purple pancakes, people looked at me with the "WTF are these" look. Mmmmm grape flavored pancakes.

X2 I love telling everyone that there is vinegar in the pancakes. Just to watch the facial expressions.
