Smoked chipotle cheddar beef sticks
This is just a test batch and it turned out very good. the next batch will be 10 lbs with a little more chipotle tabasco.
•2.5 lb. lean ground beef
•4.5 tsp. Morton Tender Quick
•1 1/2 tsp. mustard seed
•1 1/2 tsp. garlic salt
•1 1/2 tsp. coarse ground pepper
•1 tsp. Liquid Smoke
•1 tsp. hickory smoked salt
•5 oz smoked cheddar cheese
•1 tsp. chipotle tabasco
Mix all ingredents in 1/2 cup cold water and mix in with beef and cheese.
Into the smoker
120 F for 1 hr no smoke vent wide open
130 F for an hr, start the smoke,
140 F for an hr.
150 F for an hr.
160 F for an hr.
170 F till the internal temp of the sausage hits 152 F
