Smoked Rabbit

I smoked a rabbit this morning (not what you thought, hu). I usually just do an herb and olive oil marinade, then a slow roast over the fire, but that's getting a bit boring.

Anyone have any new and exciting ideas to try? I'm heading into town shortly to resupply and hit the grocery so the sky's the limit.

Fresh crisp lettuce, matoes, and peppers! Can't wait!!

Well.. that was an epic FAIL. I had the bright idea to stuff it with baby spinach, jalapeno, and feta cheese with a bacon wrap. The bacon turned out all right, but there was just enough juice from the rabbit to waterlog the "stuffing" and make an unholy mess in my dutch oven. I finished it off braised over the fire and the next two hours trying to salvage my dutch oven. What a friggin mess!!

Not recommended.

Success does not come easily. Keep us up to date on your next endeavor, I'm sure you will successfully find something that none of us have tried😄
