Smoking baby backs today
Using the pellet smoker today to create some delicious smoked baby backs using a 50/50 mix of Washington alder and maple pellets and my pit boss smoker.
8 am outside temp 38°

Looks and sounds great! Was just telling DW that i want to smoke some racks this week. Do you foil part way through or just leave them open?

I leave them open till they are done, then remove them and foil them up for 30 minutes.
Lightly smeared with yellow mustard and famous Dave's rib rub.

I usually smoke for about 6 hours then 1 hour wrapped in foil with bbq sauce

The problem I found with smoking ribs, is getting them lit.
The draw is also problematic.

6 hours seems to be the magic number!
I rarely put bbq sauce on them.
More often then not I prefer eating them without.
Now ms Amy on the other hand gets her own little special wrapped up package with bbq sauce, and only Sweet Baby Rays.

Turbs, I opened up FRF this morning and saw " Smoking baby backs today" thread I just knew who it was. Sure enough it was Turbs and his smoker at it again. Now I think I need to run down to the meat mkt to find some baby backs and cook some up today myself. Darn you!!!
