Best thing I ever got was a piece of chainmail called The Ringer to clean up my cast iron. Some warm water and a scrub with that thing, and you are good to go. It scrubs off anything without ruining the seasoning. Paper towel dry, then a light coat of cooking oil before putting away. I too try to keep my rig weight down while traveling, only bring my Lodge cast iron griddle.

Got my attention. How do you make naan on these and does it taste like real Indian naan? Probably too much carbs, but I love naan.

I guess my family has been doing it wrong for over a hundred years, making cornbread, caramel dumplings and pancakes in a cast iron skillet must have shortened my ancestors lives but I doubt it since they all lived til 80+. You never heard of people who ate food prepared in cast iron being iron deficient. Just like a old time doctor prescribing a nail stuck in an apple overnight for extra iron in your diet. And sorghum syrup tastes a whole lot better when boiled down into molasses in a cast iron kettle.

I have several inherited iron skillets. I have 2 in our camper. I cook tomato based sauces in them all the time and it’s not a problem.

I'm a young 73, but I remember everyone using cast iron pans and even spiders when I was growing up. I think the chef is either really young or doesn't understand how to season the pans.
